  • 1 pound lean ground beef
  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 large vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives

Instructions

  1. In a mixing bowl, combine ground beef, panko bread crumbs, tomato paste, Worcestershire sauce, mustard, onion powder, pepper, and salt until evenly mixed. Form into four oval patties.
  2. Heat olive oil in a cast iron skillet over medium heat and brown the patties for 2-3 minutes on each side. Remove and keep warm.
  3. In the same skillet, cook diced onions until translucent; add mushrooms and sauté until softened. Stir in thyme, garlic powder, and flour.
  4. Gradually add beef stock while scraping the pan's bottom to deglaze. Bring to a boil then reduce heat and stir in butter; season with salt and pepper.
  5. Return patties to the skillet and simmer in gravy for another 5-7 minutes until cooked through.
  6. Garnish with chopped fresh herbs before serving over your choice of sides.
