Ingredients
- 1 lb large shrimp, peeled and deveined
- 1–2 ripe avocados, sliced
- 2 cups cooked rice or quinoa
- 1 large ripe mango, diced
- 1/4 cup diced red onion
- Juice of 1 lime
- 1/4 cup plain Greek yogurt
- 1 tsp chili powder
Instructions
- Prepare the mango salsa by combining diced mango, red onion, lime juice, and salt in a bowl. Chill in the fridge.
- Make the lime-chili sauce by whisking together Greek yogurt, chili powder, lime zest and juice, and honey in another bowl.
- Season shrimp with chili powder, salt, and pepper. Cook in a heated skillet until pink and charred (about 2-3 minutes per side).
- Assemble bowls with rice/quinoa as the base. Top with shrimp, avocado slices, and mango salsa.
- Drizzle with lime-chili sauce and garnish with cilantro before serving.
