- 1 oz taco seasoning mix
- 14.5 oz diced tomatoes with green chilies
- 15 oz black beans (drained and rinsed)
- 15 oz corn (drained)
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- 6 small flour or corn tortillas (cut into strips)
Instructions
- In a large skillet over medium-high heat, brown the ground beef; drain excess fat.
- Add diced onion and sauté until softened, then stir in minced garlic.
- Mix in taco seasoning and diced tomatoes; remove from heat.
- Spray slow cooker with non-stick spray; layer salsa, tortilla strips, half of the beef mixture, black beans, and corn. Repeat layers.
