  • 1 cup vegan butter for frosting
  • 3 teaspoons vanilla paste (or extract)
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream together vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until fluffy.
  2. In another bowl, whisk together flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually mix dry ingredients into wet ingredients until just combined.
  4. Chill the dough for at least 30 minutes.
  5. Preheat oven to 350°F (177°C).
  6. Scoop dough into balls, flatten slightly on parchment-lined baking sheets, and bake for 10–12 minutes.
  7. Cool cookies completely before frosting.
  8. Whip together frosting ingredients until fluffy and pipe onto cooled cookies.
