- 12–15 jumbo pasta shells
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
- 2 cloves garlic (minced)
- 2 cups marinara sauce
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook jumbo pasta shells according to package instructions until al dente. Drain and cool slightly.
- In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, egg, spinach, garlic, salt, and pepper. Mix well.
- Stuff each shell with about 2 tablespoons of the filling and place seam-side up in a greased baking dish.
- Pour marinara sauce over shells and sprinkle with remaining mozzarella.
- Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
