  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
  • 2 cloves garlic (minced)
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook jumbo pasta shells according to package instructions until al dente. Drain and cool slightly.
  3. In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, egg, spinach, garlic, salt, and pepper. Mix well.
  4. Stuff each shell with about 2 tablespoons of the filling and place seam-side up in a greased baking dish.
  5. Pour marinara sauce over shells and sprinkle with remaining mozzarella.
  6. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
