  • 4 chicken breasts
  • 4 ounces cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 1 ½ cups chopped fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon mayonnaise
  • 1 teaspoon garlic (minced)
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle olive oil over the chicken breasts. Season both sides with paprika, garlic powder, onion powder, and salt.
  3. Carefully cut pockets into each chicken breast.
  4. In a bowl, combine softened cream cheese, grated Parmesan, chopped spinach, minced garlic, red pepper flakes, and remaining salt.
  5. Stuff each pocket with the spinach mixture.
  6. Place stuffed chicken in a baking dish and bake uncovered for 25-30 minutes until the internal temperature reaches 165°F (75°C).
