  • 2 tablespoons olive oil
  • 2 cups finely diced onion
  • 1 cup finely diced carrots
  • 1 cup finely diced celery
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 11/2 cups green split peas (rinsed)
  • 2 small bay leaves
  • 1 meaty ham bone (or ham hocks)
  • 8 cups reduced-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large heavy-bottomed pot, heat olive oil over medium heat. Add diced onions, carrots, celery, salt, and pepper. Sauté until softened (5 to 8 minutes). Stir in garlic, Italian seasoning, cumin, thyme, and red pepper flakes; cook for an additional minute.
  2. Add the rinsed split peas, ham bone, bay leaves, and chicken broth. Bring to a boil then reduce heat to low. Simmer uncovered for 60 to 90 minutes until peas are tender.
  3. Remove the ham bone; shred meat off the bone and return it to the pot. Discard bay leaves. For creaminess, blend part of the soup if desired.
  4. Serve warm with hearty buttered bread or fresh thyme garnish.
