Description

Sunshine Salad is a vibrant and refreshing fruit dish that brings a burst of tropical sweetness to any meal. This delightful salad, featuring a medley of fresh fruits combined with creamy vanilla pudding, is perfect for summer picnics, family gatherings, or as a light dessert.


Ingredients

  • 1 fresh pineapple, cored and cut into chunks
  • 1 can (15 oz) of Mandarin oranges in light syrup
  • 2 bananas, peeled and sliced
  • 1 box (4 serving size) Jell-O sugar-free vanilla instant pudding

Instructions

  1. Keep the Mandarin oranges in their syrup; do not drain them.
  2. Chop the pineapple into bite-sized chunks and slice the bananas.
  3. In a large mixing bowl, combine all chopped fruits.
  4. Evenly sprinkle dry vanilla pudding mix over the fruits (do not mix with milk).
  5. Stir gently until all fruits are coated with pudding mix.
  6. Cover with plastic wrap or a lid and refrigerate for at least one hour before serving.
