  • 1/4 cup coconut flour
  • 1 cup cocoa powder
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups mashed sweet potato (34 large sweet potatoes)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180C/350F and grease a 9 or 10-inch cake pan.
  2. In a food processor, blend the coconut flour, cocoa powder, sugar, baking powder, salt, mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract until smooth.
  3. Pour the batter into the prepared cake pan and bake for 45-50 minutes. Check for doneness with a skewer—it should come out clean.
  4. Allow the cake to cool completely before frosting or serving.
