  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjust to taste)
  • ½ cup coconut milk (or regular milk)
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped peanuts
  • 2 tablespoons chopped fresh cilantro
  • Steamed rice or noodles

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. In a skillet, heat vegetable oil over medium-high heat; cook chicken until browned (5-7 minutes). Remove from skillet.
  3. In the same skillet, sauté minced garlic and ginger until fragrant. Add peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil; mix until smooth.
  4. Return chicken to the skillet; toss to coat in the sauce and simmer for 3-5 minutes.
  5. Serve over steamed rice or noodles, garnished with chopped peanuts and cilantro.
