- 2 teaspoons pure vanilla extract
- ¼–½ cup unsweetened soy milk (or almond)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
- Combine soy milk and apple cider vinegar in a mixing bowl; let sit for 5 minutes.
- Add oil, applesauce, and vanilla; mix until smooth.
- In another bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet; stir gently until combined. Carefully add boiling water.
- Pour batter into the prepared pan; bake for approximately 35 minutes or until a toothpick comes out clean.
