  • 2 teaspoons baking powder

  • 1 teaspoon salt
  • ½ cup canola oil (or melted coconut oil)
  • 2/3 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1 cup boiling water
  • 1 ½ cups vegan butter, softened
  • 45 cups powdered sugar
  • 2 teaspoons pure vanilla extract
  • ¼½ cup unsweetened soy milk (or almond)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
  2. Combine soy milk and apple cider vinegar in a mixing bowl; let sit for 5 minutes.
  3. Add oil, applesauce, and vanilla; mix until smooth.
  4. In another bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet; stir gently until combined. Carefully add boiling water.
  6. Pour batter into the prepared pan; bake for approximately 35 minutes or until a toothpick comes out clean.
