  • 12 garlic cloves
  • 2 medium potatoes
  • 1 cup frozen spinach (optional)

  • 1 Tbsp tomato paste
  • 1/3 cup white wine
  • Fresh rosemary (or dried)
  • 2 cups vegetable broth

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery; sauté for about 5 minutes until softened.
  2. Stir in garlic, beans, tomato paste, potatoes, and rosemary; cook for another minute.
  3. Pour in white wine and let simmer until evaporated (about 1 minute).
  4. Add spinach, broth, salt, and pepper; bring to a boil then cover and simmer for about 15 minutes.
  5. Once potatoes are tender, remove from heat and discard rosemary sprig. Adjust seasoning if needed.
  6. Serve hot with a drizzle of olive oil or alongside crusty bread.
