- 1–2 garlic cloves
- 2 medium potatoes
- 1 cup frozen spinach (optional)
- 1 Tbsp olive oil
- 1 Tbsp tomato paste
- 1/3 cup white wine
- Fresh rosemary (or dried)
- 2 cups vegetable broth
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery; sauté for about 5 minutes until softened.
- Stir in garlic, beans, tomato paste, potatoes, and rosemary; cook for another minute.
- Pour in white wine and let simmer until evaporated (about 1 minute).
- Add spinach, broth, salt, and pepper; bring to a boil then cover and simmer for about 15 minutes.
- Once potatoes are tender, remove from heat and discard rosemary sprig. Adjust seasoning if needed.
