  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate and butter in 30-second intervals, stirring until smooth.
  3. Stir in both sugars until well combined, then add eggs one at a time, whisking after each addition.
  4. Sift in the flour and salt; gently fold until just combined.
  5. Pour the batter into the prepared tin and bake for about 25-30 minutes until set.
  6. While warm, poke holes in the surface and pour espresso shots over brownies. Let cool completely.
  7. For the topping, beat mascarpone cheese and heavy cream with sugar until smooth; spread over cooled brownies.
