Ingredients
- 20 oz cheese tortellini (uncooked)
- 10 oz cherry tomatoes (halved)
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves (minced)
- Salt and pepper to taste
Instructions
- Boil water in a large pot and cook tortellini according to package instructions until al dente.
- While cooking, chop spinach, tomatoes, basil, and mince garlic.
- Strain tortellini with a colander and rinse briefly under cool water.
- In a mixing bowl, combine tortellini with spinach, tomatoes, mozzarella, basil, and garlic.
- Drizzle with olive oil and balsamic vinegar; season with salt and pepper. Toss well to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
