Ingredients

  • 20 oz cheese tortellini (uncooked)
  • 10 oz cherry tomatoes (halved)
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 34 garlic cloves (minced)
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and cook tortellini according to package instructions until al dente.
  2. While cooking, chop spinach, tomatoes, basil, and mince garlic.
  3. Strain tortellini with a colander and rinse briefly under cool water.
  4. In a mixing bowl, combine tortellini with spinach, tomatoes, mozzarella, basil, and garlic.
  5. Drizzle with olive oil and balsamic vinegar; season with salt and pepper. Toss well to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
