  • 1 tbsp olive oil
  • 1/2 sweet onion, diced
  • 57 cloves garlic, minced
  • 1 lb ground turkey
  • 28 oz canned petite diced tomatoes
  • 16 oz canned tomato sauce
  • 1/2 cup chicken broth
  • 1 large sweet potato, cubed (about 12 oz)
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tbsp granulated sugar
  • 1 cup frozen corn
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic for 1–2 minutes until fragrant.
  2. Add ground turkey, breaking it apart as it cooks. Season lightly with salt and pepper until no longer pink.
  3. Stir in tomatoes, tomato sauce, chicken broth, sweet potatoes, chili powder, smoked paprika, cumin, and sugar; bring to a boil.
  4. Reduce heat and simmer for about 15 minutes until sweet potatoes are fork-tender.
  5. Add frozen corn and cook for a few more minutes until heated through. Adjust seasoning if needed.
  6. Serve warm topped with cilantro, cheddar cheese, and avocado slices.
