- 2 medium sweet potatoes
- 1 teaspoon olive oil
- 1 1/4 teaspoons ground cumin
- 3/4 pound lean ground turkey
- 4 garlic cloves, minced
- 1 teaspoon chili powder
- 1 cup canned crushed tomatoes
- 1/4 cup grated pepper Jack cheese
Instructions
- Pierce sweet potatoes with a fork and microwave on HIGH for about 8-10 minutes until tender. Allow to cool.
- Cut the cooked sweet potatoes in half lengthwise, scoop out the flesh into a bowl, and mash with olive oil, cumin, salt, and pepper.
- In a skillet over medium-high heat, brown the ground turkey; add garlic, spices, and crushed tomatoes. Cook until well combined.
- Fill the potato skins with the turkey mixture and top with cheese. Broil for about 30 seconds until melted.
