  • 3 ribs celery (diced)
  • 2 large carrots (sliced)
  • 2 teaspoons garlic (minced)
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 2 cans Great Northern beans (drained and rinsed)
  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream
  • Parsley (for garnish)

Instructions

  1. In a large Dutch oven over medium-high heat, brown the Italian sausage for about 10-15 minutes, breaking it up with a wooden spoon.
  2. Reduce heat to medium and add the diced onion, celery, and sliced carrots. Cook until the onion softens, about 3-5 minutes. Stir in garlic and cook for an additional minute.
  3. Mix in tomato paste and seasonings: Italian seasoning, crushed red pepper, and black pepper.
  4. Add chicken broth and Great Northern beans; bring to a simmer for about 6-7 minutes until vegetables are tender.
  5. Stir in heavy cream and spinach; cook until the spinach wilts, around 5 minutes.
  6. Serve warm, garnished with chopped parsley.
