  • 45 cups cooked brown rice (chilled)
  • 2 cups pineapple chunks (fresh or frozen)
  • 1 red bell pepper (diced)
  • 3/4 cup green peas (thawed)
  • 1 cup purple cabbage (shredded)
  • 1/2 red onion (diced)
  • 3 cloves garlic (minced)
  • 4 tbsp tamari
  • 1.5 tbsp maple syrup
  • hot sauce or red chili flakes (optional)

Instructions

  1. In a bowl, whisk together tamari, maple syrup, garlic powder, hot sauce, and ground ginger; set aside.
  2. Heat a cast iron skillet and stir-fry pineapple chunks until caramelized; transfer to a bowl.
  3. Sauté bell pepper and onion in the same skillet until slightly charred; reserve with the pineapple.
  4. Add cabbage to the skillet and stir-fry until wilted; add minced garlic until fragrant.
  5. Combine chilled brown rice and green peas with the prepared sauce; mix well.
  6. Serve topped with fresh cilantro, scallions, sesame seeds, and a squeeze of lime juice.
