  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped

  • 3 minced garlic cloves
  • 3 Yukon gold potatoes, peeled and chopped
  • 1 cup green beans, chopped (fresh or frozen)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 32 oz vegetable broth
  • 30 oz canned diced tomatoes (with liquid)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Instructions

  1. In a pot over medium-high heat, sauté olive oil, carrots, celery, and onion for about 5 minutes until softened.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in vegetable broth, diced tomatoes, potatoes, green beans, Italian seasoning, salt, and pepper. Bring to a boil then simmer for 8–10 minutes until vegetables are tender.
  4. Finally, add corn and peas; cook for another 2 minutes until heated through.
