- 3 carrots, peeled and chopped
- 2 celery stalks, chopped

- 3 Yukon gold potatoes, peeled and chopped
- 1 cup green beans, chopped (fresh or frozen)
- 1 cup frozen corn
- 1 cup frozen peas
- 32 oz vegetable broth
- 30 oz canned diced tomatoes (with liquid)
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp ground black pepper
Instructions
- In a pot over medium-high heat, sauté olive oil, carrots, celery, and onion for about 5 minutes until softened.
